mexican jif casserole..

I love to use my home canned tomatoes and peppers with this...when I'm out I use the hunts diced tomatoes, Sometimes eliminate the jiffy mix and use Tatar tots on top I get from trader joe's...And add some cheese over the meat...There are just to many things you can do with this...I do cut this one down alot..it does make quite a bit...But I just eye ball it..

Ingredients:
3 lbs. ground meat
1 small bell pepper
2 medium onions
2 cans Rotel tomatoes
2 cans mexicorn drained
2 boxes Jiffy Cornbread Mix
1 lb. shredded cheddar cheese

Instructions..
Season ground meat with what ever you like... Brown meat with onions and bell peppers. . Add Rotel tomatoes, mexicorn and cook for 30 minutes. Mix cornbread as per directions and spread in greased 14 x 10 inch pan. Spoon meat mixture over cornbread and cover with cheese. Bake at 350 degrees for 35 to 40 minutes.
