Considering the lively meatloaf discussion that began here earlier, thought maybe we coulld have a separate thread about the dish

 

Over the years, I've saved about 25 recipes for meatloaf from many different sources, even though I don't make it these days, because DH likes his beef made more simply.

 

Just dragged out the file and saw all these possible add-ins to meatloaf......which make me want to make some, regardless of what DH wants!

 

Packet of dry onion soup mix

 

Packet of Ranch Dressing mix

 

Sour cream and soft bread crumbs mixed with the meat 

 

chopped onion and green pepper

 

chopped red pepper

 

red pepper flakes

 

A-1  Steak Sauce mixed with Stove Top stuffing mix

 

And of course, possible toppings such as bacon and/or cheese slices,  ketchup/mustard/brown sugar/Worcestershire sauce.

 

Any other ideas out there?

One creative way to bake meatloaf that I saw years ago was to pack the meat mixture into a Bundt pan

I like to add 1/4 tsp ground ginger to my meat mixture for zip.

My recipe:  Good quality ground been, preferably 85/15 or so, and some good thick tomato salsa--not the watery kind.  Pour a little salsa in, mix with meat, put in a pan and bake.  

 

If you want it hotter, add spice or hot sauce.  Pour a little ketchup on top before it is completely done and bake some more.

 

NO bread crumbs, eggs, etc.  Salsa will have what you need.  You don't want it wet with salsa, but just mix in a good ratio to make the meat cohesive meatloaf texture.

My meatloaf comes from Ann Landers many years ago.  She added Lipton onion soup, one package for 2 lbs of ground beef.  My only "must" is Panko bread crumbs.  If I run out and use crackers or bread it just doesn't taste the same.  Another "must" is mix it by hand, not an electric mixer.

I bake my meatloaf in a regular baking dish vs. a meatloaf pan. I like to use diced onion & green pepper, soft breadcrumbs with milk, powdered marjoram and 1 egg for each pound of ground beef. Form it into a loaf in the pan, then coat with BBQ sauce. Bake at 350 until the internal temperature is 160.

DH uses Lipton's onion soup.  And adds some mozzarella cheese to a basic meatloaf recipe

 I no longer cook, but I always added Gulden's mustard, some ketchup, diced onion, diced green pepper, quaker oats and egg. Then I would top it with more ketchup.

Tyler Florence has a great one on The Food network that I love to make.  I believe its called Dads meat loaf   He makes this delicious 'relish'  to go with it.  Its the best.

The Cooks Country Italian meatloaf is one of the very best I've tried, as I like a moist meatloaf with sauce.

My recipe is very simple 

 

1 lb leanest ground beef you can buy...or ground sirloin

chop 1-2 onions, add worcheshire sauce and microwave to soften onions and let cool.

1 beaten egg

panko bread crumbs

cheese: cheddar w/swiss or some parmesian 

maybe a dash of A1

 

Sprinkle some parmesan on top and bake for an hour at 350 degrees.
