I bet that it is fabulous with the mix of the chocolate chips and the butterscotch chips!

Re: Mary Beth's Club cracker bars

I made this today and followed the recipe exactly as written. The graham cracker mixture set up as hard as cement! Boiling it for five minutes is way too long. We ate the chocolate topping and threw the rest away. What a waste!

That's a shame it looks so good.  I am going to try but had already decided to just use graham cracker crust mix instead of actual graham crackers.  With making cheesecake and such I always have that on hand and never the crackers.  Thanks for the heads up.  But you never know until you try.

I have a recipe similar to this but use the soda crackers that come in a sleeve instead of town house crackers and eliminate the graham crackers - instead it uses chopped pecans or walnuts. Then do not cook that mixture for so long - just til it all combines and pour over the crackers then chill while you make the peanut butter and chocolate  and they will just pour over the bottom mixture.Gosh I haven't made those for years! editted to add - I line the pan with parchment paper and it all comes out very easily then.

Re: Mary Beth's Club cracker bars

Sorry that your recipe didn't turn out as well as you hoped.  I used graham crackers that I crushed myself & I did boil it for 5 minutes.  I never stopped stirring it .  I immediately topped the crackers & found that it was was to spread.

I found it took me forever to melt the peanut butter & the chocolate & butterscotch chips in the microwave.  I had it melted & ready to go when the filling was done.

It was real tasty & I will make it again.
