These are perfect for fall. I make them every year and I hope that you'll add them to your fall baking goodie list. Enjoy!

Maple Cashew Cookies

Makes about 2 dozen large cookies

1/2 cup raw sugar
1/2 cup packed brown sugar
1/4 cup coconut oil
1 egg
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup finely chopped cashews
2 teaspoons plus 1 tablespoon maple syrup (I used local, grade B)


Preheat oven to 375 F

Mix sugars, coconut oil and eggs thoroughly.

In a separate bowl mix flour, baking soda and salt. Mix the sugar mixture into the flour mixture. Add cashews plus 2 teaspoons of maple syrup. Roll dough into 2 dozen balls (about the size of a ping pong ball).

Flatten each ball onto a cookie sheet, and place flattened cookies at least 2 inches apart. Give them room because they’ll expand a lot. Bake for 10-12 minutes, or until they are crispy and brown. Brush each cookie with some of the remaining maple syrup, because you really can’t have too much!
