Mandarin Orange Chicken Salad

Mandarin Orange Chicken Salad

1 large head lettuce...washed and torn
1 can (10 fl. Oz) mandarin oranges... drained
2 cups canned chowmein noodles
2 cups slivered almonds, toasted
2 cups cooked chicken, cubed
your choice of salad dressing

Mix all ingredients together and top with your choice of salad dressing.

NOTE: When I make this I make Asian salad dressing for it. Yummmm!! Woman Wink

This sounds so good!!  I'm hosting a ladies lunch in a few weeks and this might be just the ticket! 

Would you mind posting your dressing recipe?

LibbyLady...hi there. It's nice to meet you.  I don't think you'll be sorry with this.  Sure, I do't mind sharing the dressing recipe...Here ya go

 

 

¾ cup vegetable oil

⅓ cup white vinegar

½ cup granulated sugar

splash of soy sauce (not much at all)

 

Mix togetther...don't be concerned if the sugar dosen't dissolve completely.

Sounds like a great summer salad.  Here's another one we LOVE to eat in the summer:

 

3-4 sliced peaches

2 heads romaine cut up

cooked nicely seasoned chicken (I cheat & buy a rotissiorre from the grocery store, sorry about the spelling)

crumbled bleu cheese

slivered almonds

light salt/pepper

drizzle w/oil & vinegar

 

Line up the lettuce on one side othe plate, sliced peaches with everything else on the other.  Drizzle.  It looks pretty on an oval plate/platter.  Owner eater can mix.

 

This salad is great especially whn you get ahold of fabulous sweet peaches.  Sometimes they're questionable in flavor.

Holy toledo - I'm sitting here reading your response and going "rot chix" - what in the world is she talking about.
