My children always hated meat loaf for dinner but they loved meat loaf sandwiches. I found if I added quite abit of A1 steak sauce the meat loaf was very tasty cold in a sandwich.

I guess my variation meal would be pasta sauce. I like adding extra ingredients to it, to give it extra flavor.
I have made it from homemade where you let it simmer for a long time, to where I have bought the dried packet of spaghetti sauce, and then added extra ingredients to it where I made that into a vegeterian option for a church potluck.
I added black olives and mushrooms to it, along with some extra canned tomatoes. ![]()

This is #1 we had last night.
3/4 C. bread crumbs
3/4 C. milk
1.5 lbs. ground beef
1 onion, chopped
salt to taste
pepper to taste
1/2 C. catsup
2 T. mustard
2 T. brown sugar, packed
Combine bread crumbs and mix in a large bowl. Add ground beef, onion, salt, pepper, and sauce; mix well. Shape into a loaf and place in an ungreased 9" x 5" loaf pan. Stir catsup, mustard and brown sugar together; spoon over meatloaf. Bake, uncovered, at 375 degrees for one hour. Makes 8 servings.
#2 Love this meatloaf the best (to me).
1.5 Lbs. ground beef
1 egg
1/2 C. seasoned dry bread crumbs
1/4 C. finely chopped onion
1/4 C. milk
1/4 C. Heinz 57 sauce
3/4 tsp. salt
1/8 tsp pepper
Thoroughly combine ground beef, slightly beaten egg, bread crumbs, onion, milk, sauce, salt & pepper. Shape into laft pan (8 x 4 x 1 1/2) in shallow baking pan. Bake
for one hour. If you like top with 1/3 C. catsup, 2 T. brown sugar and 1 T prep. mustard. (The combo of the same above is great too, just different measurements.)
@qualitygal~ thank you for sharing your meatloaf recipes. I have ALOT of very lean ground beef in the freezer. I cook for my son's family every Wednesday, since I watch their two little daughters. I would like to use some of this frozen gound beef. Do you think I could double your second recipe (the one you love) and make a large one for his family, and a large one for us? I am wondering if it would get done in the center. Also, what fat/meat ratio do you buy? Mine hardly has any fat, and sometimes a little fat makes things taste better, LOL!

I haven't doubled the recipe, so I'm not sure how that would be.
On fat ratio, I do 80/20. You do need some fat in there. Good luck on that!

@rosehill, why not grind up some bacon for that meatloaf to add some fat?
