This is #1 we had last night.

 

3/4 C. bread crumbs

3/4 C. milk

1.5 lbs. ground beef

1 onion, chopped

salt to taste

pepper to taste

1/2 C. catsup

2 T. mustard

2 T. brown sugar, packed

 

Combine bread crumbs and mix in a large bowl.  Add ground beef, onion, salt, pepper, and sauce; mix well. Shape into a loaf and place in an ungreased 9" x 5" loaf pan.  Stir catsup, mustard and brown sugar together; spoon over meatloaf.  Bake, uncovered, at 375 degrees for one hour. Makes 8 servings.

 

#2 Love this meatloaf the best (to me).

1.5 Lbs. ground beef

1 egg

1/2 C. seasoned dry bread crumbs

1/4 C. finely chopped onion

1/4 C. milk

1/4 C. Heinz 57 sauce

3/4 tsp. salt

1/8 tsp pepper

 

Thoroughly combine ground beef, slightly beaten egg, bread crumbs, onion, milk, sauce, salt & pepper.  Shape into laft pan (8 x 4 x 1 1/2) in shallow baking pan. Bake

for one hour.  If you like top with 1/3 C. catsup, 2 T. brown sugar and 1 T prep. mustard. (The combo of the same above is great too, just different measurements.)

The first one I had when I was a teenager and we camped, so here it is:

Just take about a pound of ground beef or 1 & 1/2 lbs. and some diced onion, and can of undiluted chicken gumbo soup. Mix it all together after you brown onion in the hamburg. It really was good!!

 

This one, is like same ingredients for meatloaf, only do it stove top.

1 lb. ground beef

1/4. C. chopped onion

1/4 C. chopped green bell pepper

1/2 tsp. garlic powder

1 tsp. prepared mustard

3/4 C. ketchup

1 T. brown sugar

salt and pepper to taste

 

Brown the ground beef, onion and green pepper. Drain off the liquids. Stir in garlic powder, mustard, ketchup and brown sugar; mix thoroughly. Reduce heat and simmer for 30 minutes, season with salt and pepper to taste.

This is a chicken salad one:

5 C. chicken, cooked and cubed

2 T. salad oil

2 T. orange juice

2 T. vinegar

1 T. salt

1, 11 oz. can mandarin oranges, drained

1, 13 oz. can pineapple tidbits, drained

1 C. toasted slivered almonds

1 1/2 c. small green grapes

1 1/2 c. mayonnaise

1 1/2 c. celery, sliced

3 c. cooked rice

 

Combine chicken, salad oil, orange juice, vinegar, and salt.  Let stand while preparing remaining salad ingredients or overnight. Gently toss all ingredients.

I make an Italian Sloppy Joe using spaghetti sauce.  My Italian grandmother used to do this and made homemade hard rolls. I also make a version with gravy that I used to bring to work when we would have covered dishes that everyone loved.

 

I don't like traditional meatloaf but make one using sauce.  I add sauce to the meat/egg mix and add seasoned breadcrumbs and mozarella shredded cheese and poor more sauce over to cook.  Pizza meatloaf is good also.  Just add pizza sauce to the meat/egg/seasoned bread crumb mix, ground pepperoni and put a hunk of mozarella cheese in the center.  Bake with pizza sauce and grated parm and shredded mozzarella on top.

Here's a S. J. recipe I just came across, for 8.

 

3 lbs. browned and drained, ground beef

1 finely chopped onion

1 green pepper, chopped

28 oz can tomato saucce

3/4 C. catsup

3T. Worchestershire Sauce

1 tsp chili powder

1/2 tsp pepper

1/2 tsp garlic powder

8 buns, split

 

Combine all but buns in a slow cooker. Cover and cook on low 8-10 hours. Can do on high for 3-4 hours.

Oh, those sound good QG! I used to do "Taco Joe's" for my son when he was little..kind of like the old Taco Bell "Bell-Beefer", basically taco sesoning  intead of the usual seasonings in the ground beef...top woth shredded lettuce, tomtaoes, cheese nd blck olives on a bun...

Bay Area California Meatloaf: This is our family meatloaf recipe from the 60's.  Secret ingredient is dry oatmeal!

 

Mix in large bowl:

1 1b of ground hamburger meat

one packet dry onion soup

2 Tablespoons Dash or any seasoning you like

1 egg

1 cup dry oatmeal

Pepper to taste

couple spoons of ketchup or any tomato sauce to moisten

 

I just use my hands to mix, and add more oatmeal or ketchup if needed

Mound like a bread loaf in a rectangular baker or bread pan.  I always make it higher in the center and don't press into edges of pan.  I like to put a ketchup "stripe" along the top. You can decorate with sliced olives. Bake at 350 for 1 hour or until a knife comes out clean when inserted in the center.

 

Let cool 10-15 minutes, then slice prior to serving
