Ina's recipe calls for one pound of Yukon gold potatoes (to mash) and two pounds of russets (to shred). It made a wonderful combo.
I thought the whole idea behind making latkes for Hanukkah was to fry in oil, not lard. I used oil since I was making them for a Jewish guest.

I haven't made Latkes for 2 or 3 years. I used to make them all year round. When I did, I either made the regular recipe, I made sweet potato Latkes or, I sometimes mixed the two potatoes together. Always a favorite in our family whether to eat them with sour cream or applesauce was always a discussion. I ate them with both.

I love potato pancakes!
I shred the potatoes with a “wire” grater. It has stiff metal wires which have been woven to form a flat surface. I place the grater on top of a bowl and then rub the potatoes and onion across the surface of the grater. This is the way my Lithuanian grandmother taught me. I like the texture of the potatoes grated this way.
She never used flour. Instead, she poured off most of the potato water but kept all the potato starch that had accumulated in the bottom of the bowl.
The memory is so clear...the pink bowl she would use, the smell of the oil, the taste of the crunchy browned edges....and me waiting for the next one, and the next one...

My mom never added flour., but the rest of these ingredients were used. Applesauce and Sour Cream a must, but not mixed! lol Had to change the taste now and then. Sure do miss my mom. Will have to make me some latkes soon. Thanks for bringing back great memories.
