This came out of The SkinnyTaste Cookbook that I checked out of the library. Tried it yesterday. Very good.

3 T roughly chopped red onion
1 T + 1 t extra virgin olive oil, divided
1-1/2 T apple cider vinegar, divided
1/2 t kosher salt, divided
Freshly ground black pepper
1 cup chopped tomatoes
1/8 t garlic powder
1/8 t dried oregano
1 cucumber, peeled and cut into 1 inch pieces
1 med Hass avocado, chopped
3 cups chopped Romaine lettuce

In large bowl combine the red onion with 1 T olive oil, 1 T vinegar, 1/4 t salt and black pepper to taste. Let sit 5 minutes.

Add the tomato, garlic powder, oregano, remaining 1/4 t salt and pinch of pepper. Let sit for at least another 5 minutes. Add cucumber and toss.

When ready to serve, toss in avocado and lettuce, the remaining 1 t olive oil and remaining 1/2 T vinegar.

Ok......You said it was your house salad, so what time do I come to your house.......Smile An extra shot of vinegar would be all that I need........Wink

This has been my house salad for years. I use the big white onions because I love the taste of them. Used to make with iceberg but changed to Romaine several years ago. I do change dressings occasionally.

yum! (I always have to add some feta or other cheese though...probably would not be in that ""skinny"" book then! )
