Mushroom Stroganoff--Serves 4
1. Cook egg noodles according to package directions. Remove from heat, and cover to keep warm.
2. Heat olive oil and 1 Tbsp. butter in a large skillet over medium-high heat. Add mushrooms, and cook 5 minutes. Stir in garlic and next 4 ingredients, and cook, stirring occasionally, 3 minutes or until mushrooms are slightly browned.
3. Add flour and remaining butter, and cook, stirring constantly, 2 minutes. Whisk in broth, and bring to boil, whisking constantly; boil, whisking constantly, 5 minutes. Remove from heat. Stir in sour cream and parsley, and serve over noodles.

Looks like a good recipe but one suggestion, you might want to use veggie stock instead of chicken if you want to keep it a completely meatless. Bon appetit!

I agree. There is a difference between a stroganoff that does not contain meat and a vegetarian stroganoff. Hence the name "meatless", I suppose, rather than "vegetarian". The people I cook for would call this a side dish, not the main meal.
We don't speak vegetarian in our household. If I told my husband I wanted to make a vegetarian meal, he would probably head out to the nearest restaurant......without me.

Thanks for your response NOVAMC. I am a vegetarian so it always makes me chuckle when I read meatless and then see an ingredient like chicken stock. I think that your explanation makes complete sense though.
Regardless, I think think this looks like a yummy recipe--combined with a salad and wine, sounds like a great winter meal!
PS. I get the whole vegetarian question--I was raised in an carniverous home and my husband was raised in Nebraska but is also now a vegetarian! It is even more complicated when we explain that most of the time we are vegans and only eat a little bit of dairy...leaves some folks scratching their heads...
