I'm in Virginia and kudzu grows here, too.  Before the recipe was posted in this thread, I also didn't know it was eaten!  Did you know that kudzu festivals are held?!!!  There is one scheduled in ATL this September.  I googled 'kudzu:' and found an interesting article 

about a NC church's embracing of the dreaded vine leading to their discovery of its uses in human consumption and, ultimately, to their kudzu festivals.

 

Kudzu is used to.make jelly, a candy of white chocolate, roasted pecans and roasted kudzu leaves; a quiche which supposedly tastes li!e spinach and even a snuff (yuck!!!) that aids in quitting tobacco- smoking, as well as the fried applications for kudzu as presented in the above post. Blossoms of the kudzu, used in making the jelly, purportedly smell !like grapes.

 

I think I would be curious enough to want to attempt kudzu jelly, fried or stir-fried leaves or quiche if someone would gather the leaves for me-- I just think where kudzu grows is a prime location for snakes! LOL
