MASH POTATO PATTIES


4 cups of mashed potatoes
1 egg
1 green onion, sliced
1 cup of cheddar cheese, grated
1 cup of flour
butter
salt and pepper
chives for garnish, if desired

 


1. Combine mashed potatoes, onion, egg, cheese, flour in a large bowl
2. Spoon up about 1/3 cup of the mixture, shape into balls
3. Roll each into flour and flattened into patties
4. Melt butter in large skillet over medium heat
5. Fry each patty in the skillet about 5 minutes each side until golden brown, salt and pepper to taste
6. Garnish with chopped chives

Thanks for posting this. It's something I'd forgotten.  My Grandmother used to make these often, and I loved them.  She left out the onion, however, as she really didn't like onions. I might make them tonight.

This is similar to what my dad used to make - but we used Italian breadcrumbs in them. I love the idea of the cheddar cheese - I have to try it!

My mom always made them without the cheese with leftover mashed potatoes.  It is a fav childhood memory.

I bet these would be good done in an air fryer.

Sounds good to me.  I love potatoes!  But it does kind of sound like a lot of flour.    I guess I'd have to see how the ratio of potatoes to flour actually looks.   I might lighten up on the flour a bit if it looked like a lot.  Smiley Happy

So did mine, Chicagoan!  And you are right, this is a favorite childhood memory.  We didn't have air conditioning until I was in high school.  I can remember the smell of these wafting outside the kitchen window as a child.  I would be in the yard playing and knew without looking I was going to like dinner that night-even if cooked to death spinach made it to the table, too!

My Mother made these as well. I'm trying to find and have these taste like my Childhood. I too think a cup of Flour seems like a lot. Then we will need more for rolling the balls in before flattening and frying? I have a Board on my Pinterest Page just for Mashed Potato Pancakes.
