OK, here we go.....fills the bill.....I think....holiday fun recipe.....

 

IRISH GUINESS MAC AND CHEESE

 

1 lb. Elbow MACARONI

2 tablespoons butter

2 tablespoons flour

2/3 cup GUINESS or other Stout Beer

1 1/2 cups milk

1/2 cup half and half

1 teaspoon salt

1/3 teaspoon black pepper

2 teaspoons dry mustard

3 ozs. softened cream cheese cut in pieces

4 ozs. grated Irish cheddar or another good melting cheese

4 ozs. grated Gruyère cheese

Optional toppings bacon, cook and crumbled and 1-2 cups crumbled potato chips 

 

Cook MACARONI just until it is al dente.  Reserve cup of pasta water, set aside and drain pasta.  In large pan over

medium heat, melt butter and sprinkle in flour.  Whisk together for 2 minutes.  As you whisk, pour in the GUINESS, milk, half and half, salt, pepper and dry mustard.  Bring to a simmer and continue to whisk until it thickens slightly.  

Add cream cheese, grated cheddar and Gruyère cheese and stir until completely smooth.  Add drained pasta and stir together.  Let sit over low heat for few minutes stirring frequently.  If needed, add some of the saved pasta water to create desired consistency.  Sprinkle with bacon pieces and potato chips before serving.

BLUEBERRY MUFFINS

1/2 Cup butter at room temp.

1C  granulated Sugar

2     Large eggs

1 tsp Vanilla

2 tsp baking powder

1/4 tsp salt

21/2  cups  BLUEBERRIES (mash 1/2 cup) canned and frozen OK.   ( I use fresh for the whole berries and mashed thawed frozen ones)

2 C  flour

1/2 C milk

1Tblsp sugar mixed with 1/4 tsp ground Nutmeg for tops.

 

Method:  Heat oven to 375f  Grease 12 regular muffin cups including area between cups. 

In a medium bowl, beat butter until creamy.  Beat in sugar until pale and fluffy.  Beat in eggs 1 at a time.  Beat in vanilla, baking powder + salt.

Mix Mashed berries into batter.

Fold in Half the flour, then Half the milk. 

Add remaining flour and milk folding in with a spatula.

Fold in remaining Blueberries.

Scoop batter into muffin cups and sprinkle with nutmeg sugar.

Bake at 375 for 25 to 30 minutes or until golden brown.

Let muffins cool in pan at least 30 minutes before removing.

Garlic Butter Orzo and Cod PARCHMENT PACKETS

 

1 cup uncooked orzo

1/4 cup fresh herbs, like parsley and basil

1 lemon, zest freshly grated and then sliced

1 tablespoon olive oil

6 tablespoons unsalted butter

4 garlic cloves, minced

4 cod filets (about 4-5 ozs. each)

1 lb. asparagus spears, woody ends removed

1 cup cherry tomatoes

4 green onions, sliced

salt and pepper

 

Preheat oven to 400 degrees.  Have 4 sheets of PARCHMENT PAPER ready to go.  Season cod all over with salt and pepper.  If asparagus spears are thick (and you use), cut in half lengthwise.

 

Cook orzo in salted water according to package directions.  Drain and drizzle with olive oil.  Toss with fresh lemon zest and chopped herbs.

 

Heat butter over low-heat until it melts.  Stir in garlic.  Remove from heat.

 

Make a PARCHMENT PACKET.  Fold up short sides.  Place a 1/2 cup of orzo in center.  Then add a few asparagus spears, cherry tomatoes and green onions (all divided evenly between 4 packets).   Place cod filet on top.

 

Driizzle fish and vegetables with some of the garlic butter...1 tablespoon or more.  Place lemon slice on top.  Fold up long edges over fish and close packet tightly. Place on a sheet pan.  Bake for 15-18 minutes or until fish flakes easily if tested.  If you have extra garlic butter leftover, drizzle on and serve!

Two Recipes to share.....

 

Breaded Turkey Breasts

 

1 cup dry BREAD CRUMBS

1/4 cup grated Parmesan cheese

2 teaspoons Italian Seasoning

3/4 cup milk

8 turkey cutlets (approx 2 oz each)

1/4 cup olive oil

 

 

Combine BREAD CRUMBS, Parmesan cheese and Italian seasoning.  Pour milk into shallow dish.  Dip Turkey cutlets in milk and then roll in crumb mixture.

 

Heat olive oil over medium heat and cook cutlets for 4-5 minutes on each side or until juices run clear.   Drain on paper towels.  


Chicken Pronto

 

4 boneless chicken breasts

Italian Salad Dressing

BREAD CRUMBS...w/Italian Seasonings

 

Dip chicken in Italian Dressing...then in BREAD CRUMBS. Place in a 9x13" baking dish. Cover and bake at 350 for 30 minutes....Uncover and bake another 30 minutes.
