Just another thought.....can also make it....category....SPICE, VEGETABLE, FRUIT....favorite anything?  I guess that can all fall into "Poster's Choice" as well.

 

Thanks for sharing thoughts and ideas.

I took an old Chili Recipe of my mother's and tweaked it a bit....not bad for quick dinner.

 

Chili

 

1 lb. Ground beef

1/2 onion, chopped (more if you prefer)

2 cans diced tomatoes 

1 can KIDNEY BEANS

2 tablespoons chili powder

1 teaspoon salt

1/4 teaspoon pepper

 

Put small amount of oil in pan.  Brown onions and ground beef; drain fat.  Add tomatoes, kidney beans and spices.

Mix together and simmer one hour.  

(at end I sprinkled a little cinnamon in it...don't know why but I did...ha...chili turned out good)

Pig Pickin' Cake

This pig pickin' cake is a wonderful, easy-to-make dessert. Three layers get topped with frozen whipped topping and pineapple. I got the recipe from a lady in the Tennessee mountains.  1 8-inch layer cake.

 

Ingredients

Cake:

  • 1 (15.25 ounce) package yellow cake mix (Duncal Hines)
  • 1 (11 ounce) can mandarin oranges. UNdrained.
  • 4 large eggs
  • ¼ cup vegetable oil

Frosting:

  • 1 (16 ounce) package frozen whipped topping, thawed
  • 1 (15 ounce) can crushed pineapple, drained
  • 1 (3.5 ounce) package instant vanilla pudding mix

Directions

  1. Gather all ingredients. Preheat the oven to 350 degrees F.   
  2. Prepare the cake: Mix together cake mix, oranges with juice, eggs, and oil. Pour batter into three greased and floured 8-inch round pans. Layers will be thin. **

  3. Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, 25 to 30 minutes. Cool layers on wire racks.

OR

**for a family dessert… Preheat oven to 350F degrees.
Spray a 9×13-inch baking dish with nonstick cooking spray (I prefer the kind that has flour in it like Baker’s Joy).   

Cool.  Top with Frosting!

 

My daughter made Wedding Cakes and used this cake recipe!

 

She used a different icing to decorate several layers!!

Blueberry Glazed Chicken

A homemade blueberry sauce made with blueberries, light brown sugar, oregano, rosemary, onion, and garlic is used to glaze the chicken before baking, and then added again to seal in the flavor just before baking is done. Juicy oven-baked blueberry glazed chicken thighs are a family favorite recipe that's terrific for dinner, but the leftovers are a bonus for lunch.

INGREDIENTS

Blueberry Sauce
  • 2 cups blueberries
  • 1/2 onion, sliced
  • 3/4 cup ketchup
  • 1/2 cup red wine vinegar
  • 1/2 light brown sugar packed 
  • 1 cup water
  • 1 teaspoon garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 2 teaspoon salt
  • 1 teaspoon ground black pepper
Chicken
  • 3 pounds bone-in, skin-on chicken thighs
  • Salt
  • Pepper
  • 1 1/2 cups blueberry sauce
  • 1 tablespoon olive oil

DIRECTIONS

  1. Add all blueberry sauce ingredients to a saucepan. Bring to a boil, stirring and breaking up blueberries with back of spoon. 
  2. Reduce heat to low and simmer for 30 minutes, stirring occasionally, until sauce is slightly thickened
  3. Remove sauce from heat, allow to cool and use to glaze chicken. Store remaining sauce, covered in fridge for up to one month.
  4. When ready to cook chicken, preheat oven to 425°F. Season chicken with salt and pepper. Stir together 1 cup sauce and olive oil, pour over chicken, turn to coat, and arrange on baking sheet skin side up.
  5. Bake 20 minutes. Brush chicken with remaining 1/2 cup sauce, return to oven and bake an additional 10 minutes.

APPLE SLAW

 

Salad....4 cups coleslaw mix (from 16 oz. bag)

             1/4 cup sliced green onions (4 medium)

             2 medium GRANNY SMITH APPLES, cubed

             1/2-1 cup golden raisins, optional

 

Dressing....3 tablespoons sugar

                  1/4 teaspoon salt

                  1/4 teaspoon apple pie spice

                  3 tablespoons cider vinegar

                  2 tablespoons vegetable oil

 

Mix together salad ingredients.  Mix dressing ingredients until well blended.  Pour dressing over salad; toss gently to coat.  Serve immediately or refrigerate until serving time.
