Low Calorie Appetizer Recipes

I would appreciate any ideas you might have. I have done so well with my weight I don't want to eat anything that might spoil it. The holidays are hard so any suggestions would be helpful. Thanks

I love appetizers too. I will look in my appetizer notebook at home tonight & find something delish to post tomorrow.

Skinny Spanakopita

 

We *love* these!  They are stuffed won ton wrappers which brown like that when baked.  You can make other fillings, too.

Ingredients, to show you what is in them, they are totally skinny.

 

  • 24 wonton wrappers
  • 10 oz frozen spinach, defrosted
  • 1/2 cup reduced fat feta cheese
  • 2 garlic cloves, minced
  • 1/4 cup onion, chopped
  • 1/2 tsp red pepper flakes
  • 1 egg white, for egg wash
  • 1 tsp olive oil

This food blogger is amazing!  You can't go wrong with her recipes, in my experience.

 

She was on the Q once with David Venable, when her cookbook came out.  She has many, many free recipes offered online all the time.  Take a look:

Cucumber Chip Appetizers

 

INGREDIENTS:

 

3 large and ripe avocados

1 yellow onion

1 ripe tomato

1⁄2 cup cilantro

1 cucumber

1 lime, halved

1⁄2 teaspoon garlic salt

1⁄2 teaspoon ground black pepper

1 pinch chili powder

 

DIRECTIONS:

 

* Peel and dice all the onion.

 

* Dice the tomato.

 

* Chop the cilantro.

 

* Peel and pit each avocado.

 

In a medium sized mixing bowl combine the avocados, onion, tomato, and cilantro smashing it all together with a fork. With the lime half squeeze the lime juice into the mixture.

 

Add the salt, pepper and chili powder and continue mashing till a creamy/lumpy texture is achieved. Set a side.

 

With the other lime half rub the cut side on a serving platter so the plate has a thin layer of lime juice on top of it.

 

On a cutting board thickly slice a cucumber so each slice is about a quarter of an inch. Lay each slice flat on the platter.

 

Once all the slices are in place spoon a dollop of the avocado mixture onto each slice of cucumber.

 

Garnish with cilantro leaves if you like.

Cucumber Nachos

 

INGREDIENTS:

 

1 cup salsa

1 cucumber

1⁄2 cup fat-free cheddar cheese, shredded

1⁄2 cup fat free sour cream

 

DIRECTIONS:

 

Put the salsa in a strainer to remove some of the liquid. Peel and slice the cucumber.

 

Put the slices of cucumber into the bottom of a 9x13 pan, without overlapping.

 

Discard the extra salsa liquid. Put about 1 teaspoons of salsa on each cucumber slice.

 

Sprinkle the tops of the cucumbers with the cheese.

 

Put about 1 teaspoons of sour cream on top of each slice.

 

Serve cold.
