I desperately need to lose weight and I want to try subbing out salads for the easy pimento cheese (or similar) sandwich for lunches. You don't have to list a whole recipe if you don't have time, but a quick overview of some ideas would be appreciated! No grains please!

We have Salade Nicoise a lot. I use romaine lettuce, green pepper, tomatoes, and sliced hard boiled eggs. Then I put a can of drained tuna on. One of us isn't crazy about black olives, so sometimes I use them and sometimes I don't! I mix an oil and vinegar dressing with a little dry minced garlic added. Mix the dressing and pour it on the salad.Then I mix everything together. I got the recipe when I studied in France.

ETA: I forgot one of the important ingredients: capers! I use a few teaspoons. ![]()

I use French blend salad greens from Wegman's, add diced onion, pickled beets, hard boiled egg, tomato and sometimes diced apple with red wine vinegar dressing.

Now that fresh farm-grown tomatoes are available, we like caprezze (sp?) salads. On a salad plate, alternate tomato and fresh mozzarella slices, then top with fresh basil leaves. Drizzle with good quality EVOO and balsamic vinegar. This is more filling than you'd think and it tastes great.

On green salads, sqeeze a fresh lemon over it instead of using salad dressing. This will save calories and feel like you're having something different.

It helps to keep containers of different things all ready in the refrigerator. They you can choose lots of variety.
You should also reevaluate you total diet for problem areas.

I enjoy the chopped salad from Trader Joe's that I mix with Trader Joe's grilled chicken (which is far superior than Perdue Shortcuts which are horrible). I also mix in a can of chickpeas. This makes enough for 2 or 3 meals.

I eat salads at least 3-4 times per week, and am only offering tips, as their are so many recipes online. My favorite sites are Food.com and Allrecipes.com.😁
Adding a sprinkle of dry California raisins, or raisins that you soak in apple juice or any other low-cal beverage of your choice, is a great way to amp up the flavor, and a little guilt-free sweetness. Dried cranberries are low in sugar, and offer a nice texture and slight tartness as well. I prefer Ocean Spray.
Adding a sliced boiled egg also adds texture and flavor. I lightly season mine with different herbs, or seasoned salts. A few chopped nuts add a nice crunch to any green salad. Only use a few since you are watching your calories.😊
I also sometimes add sliced fresh, or marinated mushrooms, for texture and flavor. Pickled red onions are delicious in a salad too. They are really easy to make, and keep well in the refrigerator for several months. Watermelon salad is always refreshing if you like something cold, and light. There are tons of different recipes online.
If you like Indian food as I do, look up their cucumber and other salad recipes as well. They are delicious, and good for the waistline.😁😉
