I have made the Peaches and Cream recipe many times only we call it peach pudding pie. We love it. I have not made it for awhile but have decided to make it for a Memorial Day picnic tomorrow. Thanks for reminding me of this wonderful dessert.

here is a great peach recipe i use often.....instead of the peach pie filling i make my own filling using fresh or canned peaches. i may have gotten the recipe here on recipe swap.

canned peach filling you make yourself:

CANNED PEACH PIE FILLING

2 c. fresh or 1 (#2 1/2) can peaches

1 c. sugar

2 tbsp. cornstarch

pinch of nutmeg

2 tablespoons butter

Drain juice from peaches. Put juice in a sauce pan. Mix sugar, cornstarch, and nutmeg and add to juice. Add butter and cook over low heat until mixture thickens. Add peaches.

TOTAL TIME: Prep: 20 min. Bake: 25 min. + cooling
MAKES: 24 servings



Directions
  1. Preheat oven to 375°. Unroll crescent dough sheet into a rectangle. Press onto bottom and slightly up sides of a greased 13x9-in. baking pan. Bake 5 minutes. Cool completely on a wire rack.
  2. In a large bowl, beat cream cheese, sugar and extract until smooth. Spread over crust. Spoon pie filling over cream cheese layer.
  3. In a small bowl, whisk flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in almonds; sprinkle over peach filling.
  4. Bake 25-28 minutes or until edges are golden brown. Cool in pan on a wire rack. Cut into bars. Store in an airtight container in the refrigerator. Yield: 2 dozen.

  • 1 tube (8 ounces) refrigerated seamless crescent dough sheet
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sugar
  • 1/4 teaspoon almond extract
  • 1 can (21 ounces) peach pie filling
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 3 tablespoons cold butter
  • 1/2 cup sliced almonds

My mom used to make something similar when I was a kid. She'd mix the cake according to the box directions, pour the batter into a 9"x13" pan, then drop the peach slices through the batter. After it came out of the oven, she'd sprinkle a little cinnamon on top. No frosting needed, but a little vanilla ice cream always went well with it.

***Note - if you aren't going to use it up within a couple of days, store it in the 'fridge. It will get moldy if you leave it out.

The Louisiana Fish Fry Company has a Cobbler Mix that uses canned or fresh fruit. You should be able to find it in the baking mix section at the grocery store. Here is a link to the website http://www.louisianafishfry.com/products/Other-Items/Cobbler-Mix-1 so you know what it looks like. It is definitely quick and easy.
