Loaded Baked Potato Salad

Ingredients
  • 4 large red potatoes, diced
  • 4 thick cut strips of bacon
  • 1/3 cup light Mayo
  • 1/3 cup sour cream
  • ¼ teaspoon dill weed
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1/3 cup shredded cheddar cheese
  • ¼ cup chopped green onions
Instructions
  1. Boil potatoes for 20-25 minutes, until fork tender.
  2. Drain potatoes and set aside to cool.
  3. Cut bacon into small strips and fry until crispy. Set aside to cool.
  4. In a small bowl combine mayo, sour cream, dill weed, salt and pepper.
  5. Gently toss potatoes with the creamy mixture and top with cheese, green onions and bacon.
  6. Chill for later or serve immediately.
