Do you remember Zonya Foco's 2007 Lickety Split Cookbook? That cookbook was a real workhorse for me back in the day when I had hungry kids to feed. The recipes were quick & easy, healthy, & budget friendly. Here's one of her recipies.

 

Kickin Chicken with Fries

 

Preheat oven to 450

Spray 13 x 9" baking pan with non stick spray. (She doesn't say to use spray, but I've found it sticks without it.)

 

Mix together in a small bowl 1 C mild to medium salsa, 1 TBS packed brown sugar, & 1/2 TBS dijon mustard.

 

Place 4 (4oz) boneless, skinless chicken breasts in the baking pan. (I often use steamed tempeh instead)

 

Pour salsa mixture over chicken & bake for 30 minutes until done.

 

Serve with fries & cooked vegetables.

 

Sometimes I double the sauce & serve it over rice instead of with fries.

Skygirl21, I love vintage cookbooks too. I reciently bought an old, yet good condition Betty Crocker cookbook that we used in my high school home economics class. The book gives me a happy nostalgic feeling! Zonya Foco has her own web site where you can still purchase her cookbooks.
