A special friend shared this me...we think they are TOO good! I thought the wonderful cooks here might also.

Lemon Sours

Crust

1 stick butter or margarine

1 1/2 cups flour

Mix together and press into an 8 x 10 pan. Bake at 425 until lightly browned.

Filling

1 cup coconut

2 Tbsp. baking powder

1 cup brown sugar

1/2 cup chopped pecans

1 tsp. vanilla extract

2 eggs

Mix all ingredients together and pour over crust. Bake at 325 until firm.

Icing

1 lemon, grated, plus juice

powdered sugar

Mix lemon zest plus juice adding the sugar until thick for the icing. Spread over and chill before serving.
