Lemon Chess Pie

1- 9 inch single pie

1 cup sugar

1/4 c butter, softened, not melted

3 eggs

1/2 c milk

1 1/2 teaspoon flour

1 1/2 teaspoon cornmeal

1/4 c fresh lemon juice ( Get the largest lemon you can, roll hard on the counter to break up the insides and get the most juice)

lemon zest from 1 lemon

Preheat oven to 350*

In a mixing bowl, cream the sugar and eggs, add the eggs and milk, Add the flour, cornmeal, lemon juice and lemon zest. Mix until smooth. Pour into the pastry shell. Bake for 40-45 minutes. It will be a little jiggly, cool on a cooling rack, then refrigerate it until chilled.
