Lemon Basil Potato Salad

2 lbs med yukon gold potatoes

1/4 cup fresh lemon juice

4 cloves garlic minced

3/4 cups chopped fresh basil

1 T. dijon mustard

1 tsp. salt

1/2 tsp. ground pepper

2/3 cup olive oil

10 slices bacon cooked and crumbled

4 oz fresh grated parmesan cheese

Cook potatoes in water until tender, let cool peel and cube,( i do not peel them). Whisk together lemon juice and next 5 ingredients, then whisk in the olive oil in a slow stream. Add to potato and gently toss to coat. Sprinkle evenly with bacon and grated cheese.
