I am usually not lemon dessert person,but this recipe I have to say WOW! I had a lemon cake mix and was wondering what I could do with it.So I found this recipe and tryed it.Hope you enjoy it has much as I did. My husband also said its a keeper and when he saids that it passed his taste buds

Lemon Bars

1 egg

1/3 c soft butter

1 lemon cake mix

2 eggs

1 c white sugar

1/2 t.baking powder

1/4 t. salt

2 t. grated lemon peel

1/4 c fresh lemon juice

Powdered sugar ( opt.)

Heat oven to 350 degrees.

Mix 1 egg,butter and dry cake mix until crumbly.(This made look like its to dry,but it's not. I though the same.) Reserve 1 cup and pat the rest in a ungreased 9x13 pan and bake 15 minutes.Beat the other 2 eggs,sugar,baking powder,salt,lemon peel,and lemon juice until light and foamy.Pour over the hot crust and sprinkle with the reserved crumbs.Bake 15-20 minutes longer or until golden brown.Sprinkle with powdered sugar. Cool.
