We made this last week.  Our son loves enchiladas and Wal-Mart has been out of his favorite for months, so I thought "Why not?".  We all thought these were an acceptable substitute and will do it again in a regular rotation.

Thanks for letting us know.  I haven't had a chance to make it yet and it does look easy and good.

I'm extra lazy - I have a Tex-Mex restaurant serve me my enchiladas,

but these do look good.  Just needs more sauce.
