These are in no way authentic empanadas, but they are so easy to make.

2 Cups cooked cubed chicken

2 Cups shredded cheese (Any kind you like will work. I used Monterey Jack)

3 oz cream cheese

1/4 C chopped roasted red peppers (I used the ones in the jar)

1 jalapeno pepper seeded and chopped finely

Combine ingredients in bowl and season with S/P to taste

Using refrigerated pie crust ( for 2 9" pies)

Unroll sheet and cut into 25 3" rounds

Place 1 Tbsp filling in center of each round, brush edges with water and fold in half and seal.

Bake 15 minutes in a 400 degree oven and serve

These can be served with salsa, guacamole or sour cream for dipping.
