Layered Pasta Salad
1 1/2 cups UNCOOKED shell macaroni
1 tablespoon oil
2 cups lettuce...shredded
1 cup shredded ham
3 hard boiled eggs...sliced
1 10 ounce package frozen peas..thawed and drained
1 cup Monterrey Jack cheese..shredded
1 cup mayonnaise
1/2 cup sour cream
2 teaspoons Dijon mustard
1/4 cup sliced green onions
1/2 teaspoon salt
1/8 teaspoon pepper
Cook macaroni according to directions on package. Drain. Rinse macaroni in cold water. Drain. Combine macaroni with oil. Toss lightly to coat. In layers, layer lettuce, macaroni, ham. egg slices, peas,and cheese in a large salad bowl. In a separate bowl, combine mayonnaise and remaining ingredients. Mix well. Spread this mixture evenly over salad being sure to seal to the edge of bowl. Cover bowl tightly and chill for at least 12 hours. Before serving, toss gently.
