Layered Lemon Coconut Cookie Bars

FIRST LAYER:

1 1/2 cups flour

1/2 cup brown sugar

1/2 cup butter

Using a pastry cutter, mix as you would pie dough. Spread mixture into the bottom of a 9x13 inch pan. Bake at 350* for about 20 minutes.

SECOND LAYER:

2 eggs

1 cup brown sugar

1 1/2 cups coconut

1 cup nuts...chopped

2 tablespoons flour

1/2 teaspoon baking powder

1/2 teaspoon vanilla

1/4 teaspoon salt

Beat eggs. Add sugar, coconut, nuts, baking powder, vanilla and salt. Spread over baked mixture and bake 20 minutes more. While still warm, spread 3rd layer on top.

THIRD LAYER:

1 cup powdered sugar

1 tablespoon melted butter

juice & "zest" (rind) of 1 lemon

Mix together and spread over "warm" 2nd layer. Put in refrigerator and chill. Cut in squares.
