I was watching GMA last week, they had a story of a Lasagna Soup that has gone viral on TikTok. I live alone and don't cook a lot but this got my attention and I decided to make it. There are variations on the soup ( to call it soup isn't exactly accurate as it is thick), I made mine with onion, garlic, chicken broth, marinara sauce, red bell pepper, mushrooms, baby spinach, and lasagna noodles. You can put in a dollop of ricotta or cottage cheese and shredded mozzarella in it. It made six nice size portions which I'll have for the week. It was quite good, has any one tried it?

Hale and Hearty has a Broken Lasagna Soup that is pretty good. I'm sure yours is very tasty.

@KBEANS it was good and was easy to make, I would definitely make it again. I forgot to mention you can use ground meat if you want ( the recipe I used didn't call for meat), I actually used Morningstar Farms crumbles as I don't eat meat.

Although I like soup, I had lasagna soup just once in a restaurant and would never get it again. Sounds redundant but it's like soupy lasagna that didn't bake long enough.

Sounds interesting. I was planning on making stuffed peppers but the mention of green pepper soup may have changed my mind @Sooner !

If you search Lasagna Soup here, you will find a couple of recipes for it.  One sounds like what you have mentioned.  Other one I posted which doesn't seem like Lasagna Soup to me but found recipe in magazine...pretty good too.  Thanks for reminder for this one.
