LEMON, CHIVE, GOAT CHEESE STUFFED PEPPADEWS

This was served at a salmon barbecue last weekend. Absolutely delicious - I begged for the recipe.

4 oz goat cheese
4 oz cream cheese
1/4 cup heavy cream
3 T minced fresh chives
2 T minced lemon zest
1 jar sweet piquante peppers such as Peppadews, drained (14 oz)

Combine goat cheese, cream cheese, cream, chives and zest. Transfer filling to a piping bag fitted with a medium star tip and pipe into peppers.

Note: I found Peppadew peppers in the olive bar at my local market. I had trouble piping the filling so ended up stuffing it in with a small spoon. Not much experience in piping!!

DiAnne! this is great! I love goat cheese! Our Wegman's carries peppadews in the

Mediterranean olive bar which is part of the cheese shop. I finally won't have to go on the hunt for an ingredient!

I am going to love these!

RespectLife - I hope you enjoy this. I made a few the other day and added them into a cheese platter. They looked attractive and were a nice change from grapes. I have gotten better at the piping!!!

I had to look up those peppers. I like them, just didn't know what they were called. I think they would be great with that filling. And along with barbqued salmon. Omg!

There's a restaurant I like that makes these as an appetizer. It makes for a beautiful presentation.
