LEMON CHESS PIE ~~~ 4 eggs -- 1.5 cups sugar -- 1/3 cup lemon juice -- 1 teaspoon grated lemon rind -- 1/4 cup flour -- 1/4 teaspoon salt -- 1/4 cup butter or margarine, melted -- 9" unbaked pastry shell. Beat eggs until lemon colored. Gradually beat in sugar, lemon juice, & rind. Stir in flour, salt & butter or margarine. Pour into pastry shell. Bake at 350• for 45-50 minutes or until done. Cool. Yields one 9" pie.
