LEMON BLUEBERRY GREEK YOGURT MUFFINS

I guess I am repeating this as I just found that I posted it last year on the monthly recipe game.  Very good muffins! I think lemon adds good flavor.  Freeze well.

 

Recipe makes 24 muffins.  I only have one 12-cup muffin tin so I made 12 muffins plus 2 mini-loaves....worked out well.  Recipe suggests after baking one batch you remove muffins after cooling a bit  and repeat the process using tin again.  The mini-loaves took longer to bake.  You just have to watch and test.  Recipe from Lovely Little Kitchen website but I got it from my DIL.

 

Lemon Bluberry Greek Yogurt Muffins 

 

3 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup vegetable oil

1 1/2 cups sugar

2 eggs

1 cup plain Greek yogurt

Zest of one lemon

2 tablespoons fresh lemon juice

2 cups fresh blueberries

 

Streusel Topping

 

5 tablespoons cold cubed butter

3/4 cup flour

1/2 cup sugar

 

Preheat oven to 425.  Prepare muffin tin with liners.

In medium bowl, mix together flour, baking powder, baking soda and salt.  Set aside.  In bowl of electric mixer, blend sugar, oil and eggs on medium speed until smooth.  Add Greek yogurt, lemon zest and lemon juice.  Blend until well combined.  Gradually add flour on low speed and mix until flour is incorporated.  Fold in blueberries gently.  Scoop batter into each muffin cup, filling them almost full.

 

Topping....Pour flour, sugar and cold cubed butter into a bowl and use a pastry cutter or two forks to cut butter into flour and sugar.  (Easier if you cube butter as small as possible.). You should have pea sized crumbs of flour coated butter (mine doesn't come out that well but works).

 

Top each muffin with 1-2 tablespoons of the streusel topping.  Bake for 3 minutes....then reduce heat to 350 and bake for 22-23 minutes (or little longer).  They will be starting to turn golden brown on top.

Thanks for posting this recipe I love lemon & blueberry combo ... for cream cake or muffins.

 

I was going to post an upside down blueberry/lemon cake recipe today, then read the directions and thought, uh,uh ... too many steps.

What timing. I can't believe that you posted this recipe. I will have to give it a try.

 

My husband discovered Lemon Blueberry Pie with streusel topping a few months ago. In fact he bought one yesterday. And there is a tiny sliver of pie left.

I am sure he would enjoy having a muffin with his pie.

@drizzellla and @kate2357 .... if you try these, hope you like them.  I have baked and shared with others and always got 👍.  After all my years of cooking and baking, I am trying to be more organized by getting all ingredients out before I start.  Then I don't have to start-stop-start getting an item, etc.  Works well....slow learner...that's me....haha.  It may seem like a difficult recipe but it isn't.

Thanks for posting. Those look yummy. She has several other blueberry recipes plus lots more. Now I need to make blueberry muffins. Have been wanting blueberry bread.

Thanks for posting this. I will try it, but I will use 1/2 of the ingredients so I can make  half the mufffins.

More convenient for the size of my one muffin tin.

@Nightowlz  .... thanks for message...blueberries are good for you, right!  Sounds like you found several recipes to try!

 

@Flatbush ..... thanks...I thought of doing that as well...good idea.
