Use the leftover mashed potatoes to make POTATO PANCAKES.
To the mashed potatoes, add chopped onions that have been sautƩed in butter/margarine. Form patties in your hand. Dip in beaten eggs and then in Panko crumbs. Fry in vegetable oil and drain on paper towels. **** You can do this w/ stuffing as well. Use as is. Onions may not be needed.

These are so good but instead of the Panko crumbs I have only had them dipped in flour and then fried. I am going to have to try it your way as it sounds so good.

My family loves potato cakes; sometimes I add grated cheese, and sometimes I add a small cube of cheese in the center that softens and melts during frying.
I also use leftover mashed potatoes to make a quick potato salad by adding chopped onions, pickles, celery, and my favorite dressing of mustard, mayo, sugar and vinegar.

Instead of regular bread crumbs, use Panko, they are kinda crunchy. Not as finely ground as bread crumbs. Try them, they're good!

I don't make mashed potatoes any more for Thanksgiving because that was always what was leftover. Everybody loved the dressing with gravy but not so much mashed potatoes.

I make latkes, too, but I meant leftover already cooked mashed potatoes. Panko crumbs are bigger flakes. Japanese bread crumbs. I find them in the ethnic food aisle. I love them for frying anything that I used to to use bread crumbs for...very thick crust & crunchy.

I bet these patties would be good spritzed with a bit of oil and cooked in the air fryer.
