Our daughter, Julie, had a clothing party at her home on Friday, and this is one of the snacks she served with Scoops corn chips (not Frito flavor). It is wonderful - some of you may have something similar already. It just might be my next potluck item! I thought I'd post this, since the warm months would be a great time to serve this!

(She also gave me a recipe for her Waldorf Salad made with sour cream, but I am clarifying what she gave me before posting it here.)

Julie's Cowboy Salsa

1 (15 ounce) can black beans, drained and washed
1 (15 ounce) can corn (I get the one with no salt added)
1 medium tomato, diced
1 small red onion, diced
3 tablespoons red wine vinegar
2 tablespoons olive oil
1 bunch chopped cilantro
2 avocados, diced

Directions

Mix all ingredients together. Top with avocado just before serving.
