Kielbasa Sauerkraut Soup

 

ingredients

  • 4 ounces bacon, diced 
  • 1 pound kielbasa/polish, sliced 
  • 1 onion, diced
  • 2 carrots, diced
  • 2 sticks celery, diced
  • 3 cloves garlic, chopped
  • 1 teaspoon smoked hot paprika
  • 4 cups chicken broth 
  • 2 cups sauerkraut, drained
  • 2 potatoes (or celeriac root), diced
  • 1/2 cup quinoa (optional)
  • 1 (15 ounce) can white beans, drained and rinsed
  • salt and pepper to taste

directions

 
  1. Cook the bacon in a large sauce pot over medium- high heat until crispy and set aside before adding the sausage and cooking until lightly golden brown on both sides and setting aside.
  2. Add the onion, carrots and celery to the pan and cook until tender, about 5-7 minutes before adding the garlic and paprika and cooking until fragrant, about a minute.
  3. Add broth, sauerkraut, potatoes, quinoa, beans, bacon and sausage, bring to a boil, reduce the heat and simmer until the quinoa and the potatoes are tender, about 15-20 minutes, before seasoning with salt and pepper to taste.

Chicken Rice Casserole makes for a crowd-pleasing dinner that comes together in under 5 minutes of prep time. Made with only 4 ingredients, this meal packs a lot of flavor in a filling one dish dinner that everyone will love!
 
Ingredients
  • 4 chicken breasts
  • 1 cup long grain white rice uncooked
  • 1 1/2 cups water
  • 1 package onion soup mix or use homemade
  • 10 oz can cream of mushroom soup condensed
 
Instructions
  • Preheat oven to 325 degrees F.
  • Spray 9×13 pan with cooking spray. Add chicken breasts and season with salt & pepper.
  • Pour uncooked rice over chicken. Sprinkle with onion soup mix.
  • Combine mushrooms soup and 1 1/2 cups of water. Pour over chicken.
  • Cover and bake 1 hour 15 minutes or until rice is tender.
 
Notes
My casserole is always ready in 1hr 15 minutes however depending on your own variables, it can require up to an additional 25 minutes.

RECIPE – MOM’S SPICY MEATBALLS

 

1 lb. ground beef

½ cup milk        

1 egg, slightly beaten

½ cup fine dry bread crumbs

2 tbsp. finely minced onion

1/8 teas. ground cloves

1/8 teas. ground allspice

1 teas. garlic salt

1 teas. parsley

2 cups ketchup

½ cup brown sugar

 2 tbsps. Worcestershire sauce

1 clove garlic, finely minced (optional)

 

Directions:

In large bowl, combine beef, milk, egg, bread crumbs, onion, cloves, allspice, garlic salt and parsley; mix thoroughly.  Shape into 1” balls and place on lightly greased shallow baking pans.  (I use small cookie scoop.)   Bake in preheated 350 degree oven for 20 to 25 minutes (or broil for 10 to 12 minutes). 

 

While meatballs are baking, combine ketchup, sugar, Worcestershire sauce and garlic in a medium saucepan; heat until sauce is bubbling and sugar has dissolved.  Place baked meatballs in Crockpot; pour sauce over them.  Heat together for at least ½ hour before serving.  Serve hot.  Makes 40 meatballs.

 

The longer the meatballs have to absorb the sauce, the better they are.  This makes a nice appetizer for an afternoon or evening buffet.

 

OPTION:  May use ground beef and ground sausage.  Example:  3/4 lb. beef and 1/4 lb. sausage.

Egg Bite Muffins - Spinach & Cheddar 
Serves: 12
Prep Time: 10 minutes

Cook Time: 23 minutes

Ready In: 33 minutes


Ingredients
8 oz bag Fresh Spinach
6 T. Bacon Crumbles
1 1/4  t. Dehydrated Onion
10 Pasture Raised Free Range Eggs

1 1/2 C. Shredded Cheddar Cheese
2 T. Horizon Organic Heavy Whipping Cream ,

1/8 t. Garlic Powder


Instructions
1. Preheat oven to 350*

2. Cook the spinach.  Move it to a cutting board and roughly chop it

3. Whisk eggs. Add onion, garlic, S & P

4. Mix cooked spinach in with egg mixture

5. Spray muffin tin or line with silicone cupcake liners

6. Divide 1 cup shredded cheese into the cups.

7. Put 1/2 Tablespoon bacon crumbles in each cup

8. Evenly divide egg mixture among 12 muffin cups.  Top with remaining cheese

9. Bake 20-23 mins.

 

Enjoy immediately or store in refrigerator and warm as needed.

@GenXmuse ..... I was looking for a quick-fix dinner tonight with chicken...had all ingredients for your recipe so tried the Chicken and Rice Casserole....👍...very tasty!!  We liked it. Best part is cook once, eat twice, enough for another meal for DH and myself.  Thanks!  A keeper!

 

We are off to a good start with several good recipes in January....more to try...thanks everyone!

Roasted Garlic Parmesan Cauliflower recipe
 

 

Ingredients
 
  • 1/2 cup butter melted
  • 2 garlic cloves minced
  • 1 cup Italian or plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 medium cauliflower head
 
Instructions
    1. Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper. Set aside.
    2. Remove all leaves from cauliflower head. Cut cauliflower into florets, all roughly the same size. You can slice the large florets in half, if needed.
    3. Melt butter and in a small bowl. Add garlic and stir in.

 
  1. Place breadcrumbs, salt, pepper and Parmesan cheese in another bowl.

  2. Dip each cauliflower piece into butter first, then to breadcrumbs.
  3. Place each breaded piece on prepared baking sheet. Repeat until you use up all cauliflower.
  4. Roast cauliflower for 35 to 32 minutes, or until the breading is golden brown.

Sweet and Sour Salad Dressing

 

 

 
Ingredients
 
  • 1 c. granulated sugar
  • 1 tsp. salt
  • 1/2 tsp. white or black pepper
  • 1 tsp. celery seed
  • 2 Tbsp. Miracle Whip (I use Mayo since I always have it on hand)
  • 2 tsp. prepared yellow mustard
  • 1/2 c. apple cider vinegar
  • 1/4 c. +/- sweet onion, grated or diced
  • 1 c. oil ( canola, corn, or other mild oil)
Instructions
  1. Place all the ingredients except the oil in a blender.
  2. Turn on blender and slowly pour in the oil as ingredients blend.
  3. Blend until everything is well incorporated.
  4. Store in a jar or other glass container in the refrigerator.

Rustic Pizza with Ham, Grapes, Shallots, Cheese, Honey & Thyme

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 10 minutes

Yield: 6-8

Serving Size: 1 slice/wedge

 

Ingredients

  • 1 package of refrigerated pizza dough (or homemade if you prefer)
  • 2 tablespoons olive oil
  • 1 shallot, sliced thin
  • 1/2 cup shredded Gruyere or Mozzarella cheese
  • 1/2 cup shredded extra sharp White Cheddar cheese
  • 4-6 thin slices Italian ham or prosciutto
  • 1/2 cup red seedless grapes, cut in half
  • Red pepper flakes (optional)
  • Fresh thyme
  • Fresh basil leaves
  • Sea salt and freshly ground black pepper, to taste
  • Honey for drizzling

Instructions

  1. Preheat oven to 450 degrees F.
  2. Spray a pizza sheet with oil and stretch out pizza dough to the edges making a thin crust.
  3. Drizzle the dough with olive oil and sprinkle with the shredded Mozzarella cheese. Add the sliced shallots, ham, grapes and White cheddar cheese on to the dough evenly. Top with some fresh thyme leaves and red pepper flakes.
  4. Bake for about 20 minutes until cheese is bubbly and the crust is golden brown.
  5. Top with fresh basil, sea salt, freshly cracked black pepper and drizzle with honey.
  6. Cut into wedges and serve immediately.

APPLE Broccoli Salad

 

6 medium tart APPLES, chopped

3 cups broccoli florets

1 small onion, chopped

1/2 cup raisins

1 1/2 cups mayonnaise

2 tablespoons white vinegar

1 1/2 teaspoons sugar

1/2 teaspoon lemon juice

1/2 teaspoon salt

10 bacon strips, cooked and crumbled

1/2 cup coarsely chopped walnuts

 

In a large bowl, combine the APPLES, broccoli, onion and raisins.  In small bowl, combine the mayonnaise, vinegar, sugar, lemon juice and salt; pour over APPLE mixture and toss to coat.  Cover and chill for at least 2 hours.  Just before serving, stir in bacon and walnuts. Serves 10-12.
