Here is an easy 4 ingredient recipe I like with chicken and rice

RECIPE – MOM’S SPICY MEATBALLS
1 lb. ground beef
½ cup milk
1 egg, slightly beaten
½ cup fine dry bread crumbs
2 tbsp. finely minced onion
1/8 teas. ground cloves
1/8 teas. ground allspice
1 teas. garlic salt
1 teas. parsley
2 cups ketchup
½ cup brown sugar
2 tbsps. Worcestershire sauce
1 clove garlic, finely minced (optional)
Directions:
In large bowl, combine beef, milk, egg, bread crumbs, onion, cloves, allspice, garlic salt and parsley; mix thoroughly. Shape into 1” balls and place on lightly greased shallow baking pans. (I use small cookie scoop.) Bake in preheated 350 degree oven for 20 to 25 minutes (or broil for 10 to 12 minutes).
While meatballs are baking, combine ketchup, sugar, Worcestershire sauce and garlic in a medium saucepan; heat until sauce is bubbling and sugar has dissolved. Place baked meatballs in Crockpot; pour sauce over them. Heat together for at least ½ hour before serving. Serve hot. Makes 40 meatballs.
The longer the meatballs have to absorb the sauce, the better they are. This makes a nice appetizer for an afternoon or evening buffet.
OPTION: May use ground beef and ground sausage. Example: 3/4 lb. beef and 1/4 lb. sausage.

Egg Bite Muffins - Spinach & Cheddar
Serves: 12
Prep Time: 10 minutes
Cook Time: 23 minutes
Ready In: 33 minutes
Ingredients
8 oz bag Fresh Spinach
6 T. Bacon Crumbles
1 1/4 t. Dehydrated Onion
10 Pasture Raised Free Range Eggs
1 1/2 C. Shredded Cheddar Cheese
2 T. Horizon Organic Heavy Whipping Cream ,
1/8 t. Garlic Powder
Instructions
1. Preheat oven to 350*
2. Cook the spinach. Move it to a cutting board and roughly chop it
3. Whisk eggs. Add onion, garlic, S & P
4. Mix cooked spinach in with egg mixture
5. Spray muffin tin or line with silicone cupcake liners
6. Divide 1 cup shredded cheese into the cups.
7. Put 1/2 Tablespoon bacon crumbles in each cup
8. Evenly divide egg mixture among 12 muffin cups. Top with remaining cheese
9. Bake 20-23 mins.
Enjoy immediately or store in refrigerator and warm as needed.

@GenXmuse ..... I was looking for a quick-fix dinner tonight with chicken...had all ingredients for your recipe so tried the Chicken and Rice Casserole....đź‘Ť...very tasty!! We liked it. Best part is cook once, eat twice, enough for another meal for DH and myself. Thanks! A keeper!

Melt butter and in a small bowl. Add garlic and stir in.
Place breadcrumbs, salt, pepper and Parmesan cheese in another bowl.

APPLE Broccoli Salad
6 medium tart APPLES, chopped
3 cups broccoli florets
1 small onion, chopped
1/2 cup raisins
1 1/2 cups mayonnaise
2 tablespoons white vinegar
1 1/2 teaspoons sugar
1/2 teaspoon lemon juice
1/2 teaspoon salt
10 bacon strips, cooked and crumbled
1/2 cup coarsely chopped walnuts
In a large bowl, combine the APPLES, broccoli, onion and raisins. In small bowl, combine the mayonnaise, vinegar, sugar, lemon juice and salt; pour over APPLE mixture and toss to coat. Cover and chill for at least 2 hours. Just before serving, stir in bacon and walnuts. Serves 10-12.
