Italian meat loaf

1 1/2 lb lean ground beef

1/2 c. italian bread crumbs (I use whatever bread I have)

1 c. spag. sauce or pizza sauce (divided)

1 1/2 c. mozz. cheese (keep alittle for the top)

1 egg slightly beaten

salt-pepper to taste

garlic powder to taste

Mix meat, crumbs, 1/2 cup sauce, egg, salt & pepper and garlic pwdr.

lay out 2 sheets wax paper overlapping, put meat mixture on wax paper, pat out to a rectangle about 1/2 inch thick. put cheese on meat. Using wax paper to start rolling up jellyroll style. Pinch ends closed. Bake 350 45 min. put remaining sauce and cheese on top bake another 15 min. let rest 15-20 min (or all the cheese will run out)

I serve with Parm cheese potatos

Parm cheese potatos

mix together

1/2 c. parm. cheese

1/2 c. flour

pepper

*I use more cheese than flour

heat oven to 350

In a baking dish melt 4 or 5 Tab. butter

peel 4 large potatos and 1/4 lengthwise. dampen with water coat potatos with parm/flour mixture place in baking dish. Half way thru baking flip over potatos bake 1 hr.

I put meatloaf and potatos in oven same time.
