Can be used as a vegetable or pasta.

8 oz spaghetti noodles

2 10oz pkgs frozen chopped spinach

1/2 cup chopped onion

1/2 cup grated parmesan cheese

4 Tbs margarine, softened

2 slightly beaten eggs

1 cup mushrooms (optional)

1 16oz jar meatless spaghetti sauce

Cook spaghetti according to directions on box...drain well.

Cook spinach with the onion following directions on box...drain well.

Combine spaghetti, spinach, parmesan cheese, margarine and eggs. Mix well.

Add spaghetti sauce to spinach mixture and mix throughout.

TURN INTO A GREASED AND WAX PAPER LINED 6 1/2 CUP RING MOLD.

COVER AND BAKE AT 375 FOR 25 MINUTES.

Cool ring in mold for 5 minutes.

Unmold and top with more parmesan cheese.

Serves 8
