Irish Potato Candy

Here is a sweet no-cook treat for St.Patrick's Day:

 

                     Irish Potato Candy

 

Ingredients: 1/4 cup butter, softened

                    1/2 (8 oz.) package cream cheese

                    1 tsp. vanilla extract

                    4 cups confectioner's sugar

                    2 1/2 cups flaked coconut

                    1 tblsp. ground cinnamon

 

   In medium size bowl, cream butter and cream cheese

together until smooth. Add vanilla and confectioner's sugar, beat until smooth. Mix in coconut. Use hands if necessary.

 

   You may want to chill for about five minutes, for easy handling.

 

    Roll into small balls or potato shapes and then roll in cinnamon. Place onto cookie sheet and chill to set.

   If you like a darker color, roll again in cinnamon.

 

   Keep refrigerated until serving.

@Enufstuff  I know they will be delicious! I love sweets. I've seen pictures of it, and I always wanted to make it, but never have. I love your recipe, and I know I will make this soon. Soooo good! 👍🏻

That's different.  Every recipe I have ever seen uses a cooked smashed potato and powdered sugar, then was rolled up with peanut butter in to a log,then cut into pinwheels.

 

I love coconut so, the posted recipe looks good, just different.

When my husband went to the candy store for Valentine Day candy, he also bought Irish Potatoes too.

 

The box is now half empty. Guess we have to buy another box so they at least last until St. Patty's Day. 

 

Would rather buy them. The candy store knows how to make them. I know mine wouldn't look nearly as nice.
