@haddon9 Well that is the perfect combination!!  (LOL)  I'm Scottish and my best friend is Irish.   We went to Ireland and Scotland together with our DH's a few years back, had a total blast.  Enjoy your St. Patrick's day party Smiley Happy

Edited to add that i didnt take into consideration that you wanted finger foods. I guess you could use eggroll wrappers and crecent dough to wrap and fry or bake some of these offerings. 

 

  • Bangers ( sausage links)
  • Colcannon ( mashed potaties with shredded cabbage or kale or spinach)
  • Baked beans w bacon
  • Corned beef hash topped with fried egg
  • Irish brown bread sandwiches with egg and corned beef
  • Soda bread muffins ( saw a recipe online)
  • Boxty ( potato pancakes)
  • Apple cake, muffins, 
  • Irish coffee, tea, beer, whiskey

I am part Irish and love celebrating St. Patrick's Day.  I will check my recipes but here is a quick...bite-size dessert...

 

 

Buy Brownie Bites in grocery story....get tube of green frosting......put a decorative swirl on top of each brownie bite.....if you want...buy some miniature Irish flags (on toothpicks) and put one on each.

@LindaSal Thanks so much!  It will be a great day. Smiley Happy. So far I know that I'll get a green frosted cake.  Maybe add some shamrocks to it!

 

Back in 2018 we went with extended family to Ireland.  What a fun trip!

Since you are looking for simple dishes or finger foods...

I'd recommend mini-quiche good for brunch ....easy to make or many stores have them premade.  One time I did a fruit platter made to look like rainbow.....got idea online....great ideas there.  My grandkids always enjoyed having the  "Green River" soft drink.  Here are a couple of easy recipes....I've never tried tinting cream cheese green in first one but guess you could.  Have fun!

 

Bacon Cream Cheese Bites

 

1 loaf Pepperidge Farm Original White Bread, cut crusts   

   off

1 tub of cream cheese spread*

1/2 cup chopped fresh chives *

1 lb. bacon, regular thickness 

* now you can even buy cream cheese with chives

 

Preheat oven to 400 degrees.  Line baking sheet with aluminum foil.  Set aside.

 

Spread a thin layer of cream cheese on each slice of bread.  Sprinkle 1/2 teaspoon of chives on top of cream cheese.  Starting at one end, roll each slice of bread into a tight cylinder.  Wrap a slice of bacon around each cylinder.

Cut each cylinder in half.

 

Place on baking sheet and bake until crispy and bacon is cooked through, about 20-30 minutes.  Let sit for few minutes and serve warm.  

Broccoli Bites

 

6 cups frozen chopped broccoli

2 cups crushed seasoned stuffing 

1 cup grated Parmesan Cheese

6 eggs, lightly beaten

1/2 cup butter, softened 

1/2 teaspoon salt

1/4 teaspoon pepper

 

Cook broccoli according to package directions; drain and place in a bowl.  Stir in remaining ingredients.  Shape into 1" balls.  Place in a greased baking pan.  Bake at 350 for 11-12 minutes or until golden brown.  

Can be frozen.  Makes about 5 dozen.

 

ONE MORE...little time consuming but good!  You can make with colors of Irish flag using green and orange jello.

 

Rainbow Gelatin Cubes

 

4 packages assorted flavored gelatin

6 envelopes unflavored gelatin, divided

5 and 3/4 cups boiling water, divided

1 can sweetened condensed milk

1/4 cup cold water

 

Combine one package flavored gelatin and one envelope unflavored gelatin.  Stir in 1 cup boiling water until dissolved.  Pour into a 9x13" pan coated with nonstick cooking spray; refrigerate until almost set but not firm, about 20 minutes.

 

Combine condensed milk and 1 cup boiling water.  In another bowl, sprinkle two envelopes unflavored gelatin over cold water; let stand one minute.  Stir in 3/4 cup boiling water.  Add to the milk mixture.  Spoon 1 1/4 cups of the creamy gelatin mixture over the first flavored gelatin layer.  Refrigerate until set but not firm, about 25 minutes.

 

Repeat from beginning of recipe twice alternating flavored gelatin with the creamy gelatin layers.  Chill each layer until set but not firm before pouring next layer on top.  Make final flavored gelatin on top.  Refrigerate for at least 1 hour after completing final layer.  Cut into 1" squares.

 

NOTE....as I post this I can imagine eyes rolling with too many steps, etc.  I get it....I don't do often because of it but worth it when I do.  I change colors of gelatin for occasion. Maybe just green jello would be easier...HA!

There is an Irish cookbook author--Darina Allen. She has a number of cookbooks out and one of them is --In An Irish House. She has a place in Ireland called Balleymaloe house.

She has a site in the internet --google her name and you will find all sorts of recipes and ideas.

I'm planning on a baked potato bar for our church youth in honor of St. Pat's Day.  I'm thinking  chili, cheese, broccoli, sour cream, and bacon toppings.  Dessert will probably be decorated sugar cookies/frosted brownies with holiday sprinkles.  While not authentic Irish food, it will be food that reminds them of the occasion and that they will eat.

@lork Do you think they would eat chopped corned beef on the potatoes? That and cheese sounds good to me.  We used to put a briaket in the crock pot all day so it was easy.

Thanks everyone! I have a lot of ideas!

 

 

I have the brunch meeting, and the next day a noon talk.  I'm making Watergate Salad for that. I will just add a little more food coloring than I usually do.

 

 

 

We have celebrated St. Patrick's Day in honor of, and now in memory of, my favorite uncle who was 100% Irish. He and my aunt, my mom's identical twin, never had children, so my late brother and I were "theirs" too. They lived in another state, but visited us a lot. And we went up every summer. I miss him so much.

 

 

 

So I make a traditional Irish dinner. My family's favorite is a casserole I've posted here.
