Impossible Taco Pie

1 lb lean ground beef

3 eggs

1-1/4 cups milk

1/2 cup chopped onion

3/4 cup Bisquick Mix

Seasonings

1 (15.5oz) can chopped tomatoes with chillies, drained

1 (15.5oz) can black beans, drained (optional)

1 pkg Mexican cheese blend

Preheat oven to 400.

Brown ground beef and onion, drain well. Season to taste; add drained tomatoes and black beans to the beef mixture. Mix well.

Grease a pie plate or 8x8 pyrex pan. Spoon meat mixture over bottom. Mix Bisquick with milk, eggs, and 1-1/2 cups of cheese; stir until well blended; pour over meat.

Bake for 25 minutes, or until knife comes out clean in the middle. Remove from oven and sprinkle with cheese. Bake an additional 8-9 minutes. Cool for 5 minutes.

Serve with sour cream, salsa etc...if desired.
