@northiie57  We just had meatloaf for dinner tonight.  I make it the way my BF's mother used to make it. 

 

Low fat ground beef

1 egg

panko bread crumbs

1 onion diced & cooked in the microwabe w/Worcestershire sauce (then cooled)

a sprinkle of Montreal steak seasoning

Sharp Cheddar cheese (shredded)

1 slice slice of Swiss cheese cut into small pieces

Parmesan cheese (shredded)

 

I just eyeball the cheeses when adding it to the mix.  Then I sprinkle some additional cheddar and parmesan on top prior to baking.

This is our favorite. It's simple and delicious!

 

 

 

2 lbs. ground beef 

1 c. Italian seasoned bread crumbs 

1 onion, chopped 

2-3 cloves garlic, minced

2 eggs, beaten 

1/2 - 1 tsp. salt 

1/8 tsp. pepper 

 

Mix and bake at 375 degrees for one hour.  Smiley Happy

I haven't made meatloaf in SO long.  DH would be so surprised (and happy).  I think I'll make it soon.  My secret ingredient is oatmeal.  I use that as a binder instead of breadcrumbs.  The topping is ketchup and brown sugar.

I use Mary Beth Roe's Father's delicious meat loaf recipe that is here on the QVC recipe section.  It is absolutely the best.  The only thing I omitted was the vegetable soup.  I add a little bit of beef broth instead.    Good Luck

Even tho my family likes meatloaf, they tire of the same recipe over and over.  The last meatloaf I made was with ground chuck, onion, green pepper, oats soaked in milk, eggs, salt, pepper, garlic, tomato sauce or ketchup.

@Ainhisg   your meatloaf sounds delicious -- I copied the recipe. Mine never turns out moist like yours does. Easy, too.  Thank you!

You're welcome; enjoy!  ETA:  I've given this recipe out many times.  Only one time did I have someone question how to form the meatloaf.  You don't.  You just pat it into the the pan.  It will have a flat top.  Also, after baking, don't forget to remove the grease along the sides with a turkey baster or something like that before you put the topping on and pop it back into the oven.  It is so moist and so good!

chopped onions

eggs

Catsup

tomato paste

Worsershire sauce

salt & pepper

splash or 2 of milk  (cause mom did)

Dang--I love a good meatloaf!! I use a great recipe I got from Pinterest and also will use ground veal when I can find it. then give me a meatloaf sammie and the angels will sing!!!Woman Wink
