I also make meatloaf using lean ground beef, chopped onion and green pepper, an egg, garlic, and old-fashioned oats. Sometimes I will use 1/2 envelope of dry onion soup mix. I don't use tomato sauce. I put ketchup over the top of the loaf about 10 minutes before it's done.

Needed a quick dinner idea so made the Stovetop stuffing meatloaf yesterday. Spouse had several pieces and said it was very good. Thanks for the recipe!

I make mine using gground chuck   Petridge Farms stuffing misx 1 egg chopped onion,little mix to moisten.Bake 45 mnutes and then top with 1 can tomato soup mixes with a small can on of moshroons with liqued amd a wfew dashes of Lee and Perrins wortershire sauce, Topping ix good on mashed potatos

I use meatball mix, pork & ground beef.  Ketchup  Guldens mustard,  I grate some onion into the mix,  so it's mostly juice with fine onion pieces basicly  we  don't like chopped onion in meatloaf the juice gives the flavor though,  plain bread crumbs,   A bit of dried Italian seasoning,  egg .

on top just ketchup .

We always made ours like a giant Italian meatball which is made the same way....

 

Ground Beef

Ground Pork (we won't use veal)

eggs

bread crumbs

Pec Romano cheese

and Italian type spices....basil, parsley etc etc....

 

Never ketchup

Never oats

Never crackers

No topping

 

All these recipes have given me great ideas to try new ways....esp the Stove Top!

@RespectLife  I make mine the exact same way. Sometimes I make a beef gravy on the side for those who may want that. I serve with mashed potatoes and call it dinner.

 

My husband claims he doesn't like it, yet he eats the meatballs I make, which is basically the same recipe.

 

My son and I have a joke between us...The next day I serve the meat loaf with spaghetti and cover it with sauce and grated cheese.  My son calls it Spaghetti and meat squares.

My husband eats it up but won't eat it in loaf form. 😝

When I think of a comfort meal, just like you mentioned, meatloaf, gravy and mashed pots!!!

 

We often smoke the meatloaf but my recipe is the same.

 

I am also interested in trying a topping mentioned here sometime.

Just to change it up!

@RespectLife  That's why I serve beef gravy on the side. 

I will not ever put ketchup in or on top of mine. 😂 Not a huge fan of it.
