Roasted Vegetables

 

  • 1 1/2 lbs. assorted cut-up fresh vegetables*
  • 3 Tbsp. Butter melted or olive oil
  • 2 cloves garlic, chopped
  • 1 Tbsp. chopped fresh oregano leaves [or 1 tsp. dried oregano leaves, crushed]

Directions

PREP TIME10 min

TOTAL TIME30 min

  1. Preheat oven to 450°.
  2. Combine all ingredients in broiler pan without the rack or large shallow baking sheet. Roast 20 minutes or until vegetables are tender, stirring once. Season, if desired, with fresh ground black pepper.

  4. *Assorted Cut-up Fresh Vegetables - use any combination of the following: red, green or yellow bell peppers, Spanish or red onions, white or portobello mushrooms and carrots.

I do this a lot and I also add potatoes, cabbage and squash. It is quick easy and delicious! I put olive oil on mine and season with lemon pepper and garlic salt.

We had roasted vegs. on the grill tonight.  I bought a foil grill pan with holes in the bottom, smeared it with olive oil.  Threw a bunch of vegs. and fruits mixed with olive oil and onion soup mix, in the pan. Roasted on the grill about 15 minutes, absolutely delicious.  I could eat that every single day of the year.Woman Happy
