I posted this recipe in Kitchen & Food Talk and thought I would post it here as well. I remember this cake from a very long time ago!

Icebox Cake

1 pkg Nabisco Chocolate Wafers

2 cups heavy whipping cream

1 tsp vanilla

1 T confectioner's sugar

In a large bowl, whip cream until stiff peaks just start to appear. Beat in the vanilla and sugar until peaks appear. Be careful as to not over beat.

Divide cream in half and set 1/2 aside. Frost a wafer with cream and place another wafer on top. Keep alternately with cream and a wafer until wafers are gone and you have created a log. Place log on long serving dish and frost the sides and top with remaining cream.

Chill for 8 hours. Slice at an angle.

Breky was kind enough to bring to my attention that the wafers really soak up the cream, so my original recipe that I had calling for 1 cup whipping cream probably wasn't going to be enough. She also said that extra cream will be needed to fill in around the wafers and again on the top. So I went ahead and changed the amount of cream from 1 cup to 2 cups. I may need even more. I plan on making this on Friday and I will know for sure then. I have never made this cake but my mother and grandmother made it often! I can say that it is very good!
