This spring, just for fun, I planted a banana squash in a corner of my back yard.  Oh my, that thing stretches for 15 ft in both directions and has climbed the chain link fence.  I have at least 10 huge squash.  I only needed one.  LOL  So, besides giving them to the neighbors, what do you do with yours?  Any favorite recipes?  I baked a piece last night and put butter and S&P on it.  I also have a recipe to make pie.  I substitute pumpkin with squash.

I'm gonna put some in my little garden wagon and go up and down the street  trying to give them away.  They're really delicious.

Re: ISO Banana Squash Recipes

Banana squash can be grown as a summer squash and harvested at that time and eaten raw.

Or, you can wait patiently for fall harvest and use just like a butternut — sautéed, steamed or roasted, and then used alone or in casseroles, soups and even in pies!

Wish you lived down the street from me!

Re: ISO Banana Squash Recipes

I hadn't heard of banana squash, so I just looked it up. Yikes - looks like a giant of the squash family, and similar to large pumpkins only with a different shape! The articles I saw said that many of them exceed 35 pounds! Suggestions for cooking were to cut in small pieces and roast them with olive oil and seasonings, or brown sugar and butter. Sounds like you have some giants growing in your backyard!
