I am so excited! I canned meat today and can't wait to try it out. My Great Aunt shared her recipe with me. I was quite suprised how easy it really was. She does it in the oven for 4 1/2 hours instead of in the canning water! Hope it turns out!!!

Meat

cube it and trim off some fat ( some is ok)

salt and pepper it

Put in quart jars and put some of the fat on top

boil the lids and stick the them on the jar ( make sure rim of jar is wiped off.)

Stick on jelly roll pan covered with foil ( for boil over) in 250 degree oven for 4 1/2 hours

Stick the jars in before u turn the overn on so the jars can warm up with the oven and not crack.

shut oven off after the 4 1/2 hours but leave it in the oven over night.

Thats it!!
