a baked item with a wonderful lemon taste. Or, a recipe for your favorite spring recipe that announces, "Winter is over and here is something for spring." I am a member of our local Optimist Club and we sponsor our Junior Optimists at the middle school level. They are having a spaghetti supper this coming Thursday night (3/12) and our club always provides the desert for their fundraiser.
Would anyone be willing to share their favorite/best lemon/spring recipe? It has to be something that can be put on a plate for a single serving.

@wismiss There is a string here started on 12-17-19 by ceci entitled Favorite lemon recipes that has some good ideas that might be good for your purpose.
How many people are you providing dessert for?
Best to you for a successful fundraiser.

I don't have a recipe to offer, but I think lemon bars would be a good choice, intense lemon flavor and easy to cut, serve and eat!
There are many highly rated recipes online if you google it, my limit with lemon dessert is lemon meringue pie and that's just because I love meringue so much, LOL!

These are my favorite lemon bars. It is a very old recipe from a high-school home ec class:
Crust:
1 3/4 cups flour
2/3 cup powdered sugar
1/4 cup cornstarch
1/2 tsp salt
16 tbsp (2 sticks) softened butter
Whisk flour, powdered sugar, cornstarch, and salt in big bowl. Mix in butter with electric mixer. Line 9x13" baking pan with parchment, then spray with cooking spray. Press crumbs into bottom of pan in even layer. Bake in 350 degree oven until light golden on edges, about 15-20 minutes.
Filling:
6 eggs
2 cups sugar
6 tbsp flour
1 tbsp grated lemon zest
1 cup lemon juice
1/2 cup milk
1/8 tsp salt
Whisk eggs, sugar, flour, and salt in bowl. Mix in lemon zest and juice, and milk. Pour onto warm crust. Bake at 325 degrees for 20 minutes. Cool to room temperature and sprinkle with powdered sugar.

Lemon Cream Cheese Frosting
3 8oz. Pkgs. of cream cheese ( room temperature)
(1) 11 1/4 oz. jar of lemon curd
1 cup 10 x sugar
(2) tbs fresh lemon juice
(1 tbs. grated lemon peel
Beat cream cheese and curd till smooth, add remaining ingredients and beat for 2 more minutes.
This frosting is delicious, and I usually use it on a yellow cake mix that I jazz up by adding an extra egg a nd a tbs. of cream.
If you want to get really fancy fill the layers with raspberry preserves.

Thank you for all your replies. LilLady, that recipe for the East 62nd Street Lemon Cake sounds fabulous, especially since it has a glaze.
Iceberg, Martha Stewart does have some wonderful lemon recipes and I copied many of them.
aroc3435, thank you for referring me to a previous string. We're never sure how many people will be there. They try to encourage buying tickets in advance, but they can be bought at the door. We have several members of our club who bring desserts and usually have more than enough. If any are left over, we let the kids take what they want and then donate the rest (if any) to an after school program for middle school students.
IG, thank you for giving me the link to the thread that aroc3435 referred me to and lemon bars do always go over well. I remember my Mom making them---I loved them.
indoor kitty---thank you for the recipe for the lemon cream cheese frosting recipe. Oh, my gosh, that sounds good.
deepwaterdotter---home economic recipes are always wonderful and I am sure these lemon bars would be, also.
Now, to decide what to make. I'll have to think about it over the next couple of days. But, in the meantime, thank you again for your posts.
