We love the Mediterranean-style hummus sold by Trader Joe's. Not only does it have the ingredients listed below, but there are pine nuts, olive oil, and some green herbs added as well as a hint of red pepper. I have all the ingredients on hand now for traditional hummus to make my own, and typed this recipe from Jean Anderson's "Processor Cooking" for my files. So, thought I would share it here.

One thing Anderson mentions is that before the availability of the food processor it was really difficult to make your own hummus at home; even the blender couldn't handle the heavy duty required to do so.

Food Processor Hummus

This is one time when canned is always better than fresh. Pressure canning softens the beans more than mere cooking ever could, according to Jean Anderson, whose recipe this is. She also advises to make this only one batch at a time, as even the sturdiest food processor can’t handle more.

2 medium-size garlic cloves, peeled
(1) 1-lb 14-oz can garbanzo beans/chickpeas, drained
1 c tahini, sesame seed paste now available in some grocery stores, and specialty shops
Juice of 1 large lemon
1/3 c water
3/4 t salt, or to taste
1/4 t freshly ground black pepper, or to taste

Place all ingredients in the work bowl of a food processor, using the metal chopping blade, and process for 1 1/2 – 2 min until smooth and creamy.

Empty hummus into a mixing bowl; taste for salt and pepper and add more if needed.

Cover and chill for several hours before serving.

About 30 minutes before serving, set hummus out on kitchen counter so that it will soften to spreading consistency. As a complement, serve triangles of pita bread.
