Hummingbird is a beautiful and delicious cake.........I didn't know about baking the bananas first but will try it next time...........

Love it and made it numerous times. Now I have cupcake and Light Hummingbird cake recipes. I think from Southern Living.

my sister sent me this. Is this anything like the Hawaiian Wedding Cake which I love? This one doesn't have bananas though.

HAWAIIAN WEDDING CAKE (from my sister) don't know where she got it though

2 cup flour
2 cup sugar
3 eggs
1 cup coconut
2 teaspoons baking soda
1 cup nuts(chopped walnuts work well)
2 cup crushed pineapple (not drained)

Mix by hand DO NOT USE MIXER
Grease a 9 X 12 pan, DO NOT FLOUR
Bake at 350 for about 45 minutes

TOPPING:

8 ounces cream cheese
3/4 stick of butter
both at room temperature
1 cup of 4 X powdered sugar(confectioners)
1 teaspoon vanilla

Mix at high speed
Spread on cake
Sprinkle with 1/2 cup coconut

This really is an oldie but goodie ... my recipe goes way back to when I was first married ... won't say how long ago that was! ...

I didn't get who posted these but did get them here a few years ago.

HUMMINGBIRD CAKE

.

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

2 cups sugar

3 eggs, beaten

3/4 cup vegetable oil

1 1/2 teaspoons vanilla

1 (8-ounce) can crushed pineapple,

undrained

1 cup pecans, chopped

1 3/4 cups bananas, mashed

.

Preheat oven to 350 degrees. In a

large bowl, combine flour, soda, salt,

cinnamon, and sugar. Add eggs and oil,

stirring until flour mixture is moistened.

Do not beat. Stir in remaining

ingredients. Pour batter into 3 greased

and floured 8-inch round pans. Bake for

23-28 minutes or until a toothpick

inserted in the center comes out clean.

Cool in pans for 10 minutes. Invert

onto wire racks, and let cool completely.

Frost with Cream Cheese Frosting,

Yield: 16-20 servings.

CREAM CHEESE FROSTING:

.

1 (8-ounce) package cream cheese,

softened

1/2 cup margarine, softened

1 teaspoon vanilla

1 (1-pound) box confectioner's sugar

1/2 cup nuts, chopped

.

Mix all ingredients; beat until smooth.

Frost cooled cake.

Yield: 3 cups.

Edna Lewis and Scott Peacock - The Gift of Southern Cooking

The Dr. Bird Cake...Hummingbird Cake....Cake That Doesn't Last... or Banana Bread is as follows:

3 c. Flour

2 c. sugar....note, may reduce by and use applesauce for part of this

1 tsp soda

1 tsp salt

1 cup pecans....note, I omit these

1 1/2 cups oil...can cut down to 1 or 1 1/4 cups of oil

3 eggs beaten

1 8 oz. can of crushed pineapple, not drained

2 cups banana....about 3, chopped into small pieces

1 1/2 tsp vanilla....I also like to add nut extract and banana extract

Mix dry ingredients together...

in a separate bowl combine wet ingredients

Make a well in middle of dry ingredients....add the wet and stir just until combined.

Bake in tube pan for 1 hour and 20 minutes.

Note. I use 12 inch bundt pan or 2 9 x 5 loaf pans.

Note. Baking time can vary...it can get very brown and may have to cover with foil after one hour to prevent over browning.

Time also varies from 60 to 90 minutes. Test the usual way...if knife inserted in center comes up clean.

I don't frost or add toppings, but I have heard of some terrific ideas.

1. Cream Cheese Frosting...8 oz. of cream cheese, 1/2 cup of butter, 4 cups of powdered sugar, 2 tsp vanilla.

2. Coconut Streusel topping...1/4 cup of butter, flour, sugar, coconut...equal parts...mix until crumbly.

3. Coconut Glaze...2 Tbs. butter, 1/3 cup sugar, 1/3 cup coconut, 1/3 cup milk.....heat and allow to cool slightly before applying to cake.

4. Pineapple Glaze...like above but take out the coconut and milk and use pineapple juice

5. Dust with powdered sugar or leave plain.

last note... I believe that the Hummingbird cake was traditionally baked in three cake pans and layered with the cream cheese frosting and covered with the cream cheese frosting and chopped pecans. I have seen it in photos that way, as well as a simple sheet cake.

I made your cake today snickster and it is DELCIOUS! Only changes I made were to bake it on a sheet pan and to add 1 tsp of apple pie spice. Then I made my own cream cheese frosting from a carrot cake recipe because it is a little lighter. It has 1 pack of cream cheese, 4 Tbs butter, zest and juice of a lemon, tsp of vanilla and one cup of powdered sugar. It really is a wonderful recipe, thanks for posting. I wrote it in my special book where only the very best recipes appear Smiley Happy
