How long do un-cut pumpkins keep?

I want to use it to cook my Thanksgiving stuffing.

I made a chicken, rice dish today and baked it in a pumpkin. Serving some pumpkin with the casserole. It was delicious! So now I want to do it with my stuffing for Thanksgiving.
